  1. Wash the basmati rice thoroughly and soak it in water for 30 minutes. Drain and set aside.
  2. In a large pan, heat ghee over medium heat. Add cumin seeds and let them splutter.
  3. Add chopped onions, garlic, and ginger. Sauté until the onions turn golden brown.
  4. Stir in the diced chicken and cook until it turns white.
  5. Add tomato puree, turmeric powder, chili powder, and salt. Cook until the oil separates from the masala.
  6. Lower the heat and add yogurt. Mix well and cook for another 5 minutes.
  7. Meanwhile, in a separate pot, bring water to a boil. Add the soaked rice and cook until it’s 70% done. Drain the rice.
  8. Layer the partially cooked rice over the chicken masala in the pan. Sprinkle garam masala and cover with a tight lid.
  9. Let it simmer on low heat for 15-20 minutes, allowing the flavors to meld together.
  10. Garnish with fresh cilantro leaves before serving.
